Can somebody point me in the direction of some relevant info on requirements for AOV manual override switches and panels please? Sanity check more than anything.

BS EN 12101-2:2017 Smoke and heat control systems. Natural smoke and heat exhaust ventilators

Should tell you everything you need to know. If you have access to a copy of course.

It can vary depending on the position of the vents, the type of building and the how the smoke ventilation is designed to work.
As a general rule, the fireman's overide should be just outside the protected (vented) area, on the fire brigade's intended route in.
The control panel can go anywhere.
