Just a simple question. Got a call from my local chippy re putting in a new simmerstat. He'd taken out the old one but didn't clock what spade went where. L and N in L and N out only. Not had any dealings with these before. Spades such as P1, P2, S1, S2, 2 and pilot. Know don't need pilot as no light to indicate on but where L in and out and N in and out? His peas and gravy are getting cold....lol ... looked on the net and can't find a thing.

As in most things, each manufacturer use different letter/number combinations and some even have two circuits within the same switch.
Start with one circuit or two. One makes it easy as you just have a live/ switched live and neutral. Two can be a challenge as some circuits even switch on the neutral for one leg and the live for another.
The good thing is that most industrial equipment will have a drawing somewhere stuck to a panel inside.
Looking at the connection numbers it looks like a two supply, two load and pilot configuration and the questions then occurs, is that sounding right and is the switch the correct one?

It's an - EN01 - 50.57076.070 - ENERGY REGULATOR / SIMMERSTAT CONTROLLER

Universal part fitted to various domestic and commercial appliances, this 13 amp unit is secured by one central nut (nut and washer supplied) , the rear of the unit has standard push fit terminals that are clearly marked P1, P2, S1, S2, 2 & PILOT (IF REQUIRED).

I know you have fixed it or got cold chips by now but for future use.

With the stat off L wont connect to anything. the resistance element will be between SW and N.

Turn the stat on. L will be shorted to SW.
The pilot connection is just a second SW.

You should be able to work it out from the above.

As Norm said dual heat is harder as there were two different ways of doing it and you have more connections.

RE Simmerstat,p1 is live in
P2 is n in
2 is live out.
4 is n out
s1 & s2 are seperate contacts n/o contacts which close when control is in any on position,sorry any on position.
