This might be a late reply but I have just discovered something that might interest you. Maybe you have already finidshed your app but the information I share might be useful for you in the future. I am also developing an app for iPhone and found a good page that deals with this matter. The page describes how to develop a VoIP app for your iOS devcie and there are code snippets as well.
